With the scientific name Cichorium Endivia (the same family as chicory, radicchio and sugarloaf), the leaf vegetable more commonly known as endive comes in two main varieties: curly (crispum) and broad-leaved (latifolia, also known as escarole).

The curly-leaved plants are used only in salads, while the broad-leaved varieties (like escarole) are also eaten cooked based on a variety of recipes belonging to culinary tradition, especially in southern Italy.
